Lately, Cherry has been obsessed with cooking! She loves watching cooking shows, pretending to cook in her cubbyhouse and has been begging to cook with me in our kitchen! So this week I thought it would be fun to make Red Velvet Philly Cupcakes together. I found a great recipe in Simply Heaven, a cookbook filled with Philadelphia and Cadbury Chocolate inspired recipes. And guess what… we have one copy to GIVEAWAY!
Here’s how we made them:
Ingredients: 75g butter, softened ¾ cup caster sugar1 egg, lightly beaten 1½ cups flour ¼ cup cocoa
1 teaspoon baking powder 1 cup buttermilk 1 teaspoon red food colouring 1 teaspoon white vinegar ½ teaspoon bicarbonate of soda 250 Philadelphia frosting Cream Cheese with a hint of Lemon 12 cherries 12 cupcake paper liners
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Then add the rest of the ingredients, combine well.
Evenly pour the mixture into 12 cupcake paper liners

Bake in a moderate oven at 180°C for 15–20 minutes. Once cooked, you’ll need to wait for them to cool before applying the frosting.
The cupcakes are finally ready and now Cherry joins in for the frosting
For the frosting, we tried Philadelphia’s frosting Cream Cheese with a hint of Lemon. It was so simple! No mixing or adding anything, just spread and go!
Our cupcakes wouldn’t be complete without a cherry on top!
