Last week on the blog, we shared Tiger’s 2nd birthday party and surprised you with his first big boy hair cut! This week’s post is all about his fabulous Choc-Mint Surprise Birthday Cake with a step-by-step guid on we made it!
We stated with 4 freshly baked round chocolate cakes. The cakes can be any shape or size as long as they are all exactly the same. To save time, we used a good quality packet mix.
Then I traced around a narrow glass to cut a hole in the centre of 3 of the 4 cakes. Leave one cake whole to place on the top layer.
I removed the centre and set aside. These little pieces wont be used, so eat, toss or make mini cakes!
Next we whipped up some “minty green butter cream” and stacked each layer with a generous dollop of icing between.
Minty Green Butter Cream Recipe:
250g softened butter
3 cups icing sugar
2 table spoons milk
1 table spoon peppermint essence
A few drops of green food dye
Using electric mixers, beat the butter in a bowl until pale and gradually add the icing sugar, milk, colour and mint essence until combine.
We filled the central cavity with minty chocolate lollies! One for you, one for me!
Press ’em down and pack as many in as you can!
Then we popped on the lid, (the uncut cake), to conceal the secret cavity and iced the outside with a thin cote of minty butter cream.
Elle’s tip: Use a spatchelor or a plastic ruler to smooth out the icing
Now for a second layer of icing. Slap it on!
We melted 2 cups of cooking chocolate and 2 teaspoons of vegetable oil over simmering water on the stove top.
I poured the warm delicious amazingness into a snap-lock bag and snipped a corner over the cake
I nudged the melted chocolate near the edges to naturaly cascade over the sides
Leave the cake in a cool place for the chocolate to set
Then we decorated with smashed minty lollies and a Tiger on top!
