How To Make A Rainbow Surprise Cake

Cherry and Me love baking together and thought it would be a super fantastic idea to make a birthday cake for her Rainbow Party! This week, we share how to make a Rainbow Surprise Cake!

Rainbow Surprise Cake cherryandme.comBake 4 round cakes, any flavour or colour. You can use store bought cakes, packet mix or bake your own from scratch, as long as they’re all the same shape and size.

Rainbow Surprise Cake cherryandme.comIn the centre of 3 cakes, trace a knife around a small glass to cut out a circle

Rainbow Surprise Cake cherryandme.comRemove and discard the centre piece, or eat it!

Rainbow Surprise Cake cherryandme.comThe full cake (the one you didn’t cut) will be stacked on the bottom and the other 3 will be stacked on top to create a tunnel

Rainbow Surprise Cake cherryandme.comYou’ll need a round cake board to place your cake on. A good tip is to cover the cake board with two long pieces of baking paper, slightly over lapping. This way, you’re board will stay clean and the paper will be easy to remove by simply pulling the two rectangles of paper apart.

Rainbow Surprise Cake cherryandme.comMake a simple butter cream icing with:
250g softened butter
3 cups icing sugar
2 table spoons milk
1 table spoon vanilla
Using electric mixers, beat the butter in a bowl until pale and gradually add the icing sugar, milk and vanilla until combine. You can even ad food colouring for extra fun!

Rainbow Surprise Cake cherryandme.comSpread icing on top of each layer, (about 1cm thick), to stick them together

Rainbow Surprise Cake cherryandme.comIce the outside of the cake stack with a thin layer of butter cream

Rainbow Surprise Cake cherryandme.comThis is called the crumb coat to make sure there are no crumbs in your final coating

Rainbow Surprise Cake cherryandme.comThen ice a second layer again to completely cover the cake. Place your cake in the freezer for 5 minutes to firm up that sticky icing.

Rainbow Surprise Cake cherryandme.com Place your cake back upright and fill with your favourite rainbow lollies!
